La Castellana Cheese

La CastellanaLa Castellana is a white soft cheese with 2 aging: 2 / 4 months and 7 / 9 months. Whole wheel 20 kg.

It is a completely natural product, unique, made with the same ingredients of Parmigiano-Reggiano, coming from the milk of the producers of the same geographical area. It is worked within 2 hours from the milking. The used milk comes from typical race cows only, fed with natural fodder as hay, alfalfa and not ensilage products. We could call it “a fresh version of Parmigiano-Reggiano”.

The production area is Reggio Emilia, but the recipe has middle ages origin.

Expiration: 2/3 months from date of packaging

Storage: Store in a cool place, from 0° to 6°, away from heat sources.

Recommendations for use: La Castellana is a product that lends itself to be consumed fresh as appetizer, as garnishing, on the pizza and with salads.
