Parmigiano-Reggiano cheese PDO
Parmigiano-Reggiano is a hard cheese made with cow milk. It is the most famous and imitated cheese in the world that is still produced with traditional method.
The production area is strictly limited within the triangle formed by the provinces of Bologna, Parma and Mantua, and is protected by the Denominazione d’Origine Protetta (PDO – Protected Designation Origin).
More than 600 litres of milk and lots of experience are needed to produce a wheel of Parmigiano-Reggiano.
The aging range from a minimum of 12 months to a maximum of 36 months: the older the cheese is, the more valuable it becomes and it is appreciated by the finest palates and true connoisseurs.
