Sauces for pasta

Pasta for 3 people: 320 gr.

 

Sauce with basil and chilli pepper

Cut 10 leaves of basil into strips.

Clean and chop 3 fresh chilli peppers after having removed stems and seeds.

In a pan, sauté the red chilli peppers and 3 peeled garlic cloves with 6 tablespoons of extra virgin olive oil for 1 minute.

Toss your favourite kind of pasta with the sauce and add the basil.

 

Sauce with pancetta (bacon)

In a bowl, beat together 2 egg yolks, 3 tablespoons of Parmigiano-Reggiano cheese, salt and pepper.

In a pan, sauté 120 gr. of diced smoked pancetta (smoked bacon) with 2-3 tablespoons of extra virgin olive oil for 3 minutes.

Toss your favourite kind of pasta with the sauce

 

Sauce with tomato and Parmigiano-Reggiano cheese

In a pan, sauté for 30 seconds one garlic clove with 3 tablespoons of extra virgin olive oil.

Add 600 gr. of chopped ripe peeled and seeded tomatoes

Add salt and oregano.

Cook for at least 20 minutes on medium heat with the pan semi-covered.

Remove the garlic and if you’d like add little a bit more of oregano.

Toss your favourite kind of pasta with the sauce and add plenty of grated Parmigiano-Reggiano cheese.

 

Sauce with ham and zucchini

In a pan, sauté for 1 minutes ½ a peeled and chopped onion with 4 tablespoons of extra virgin olive oil

Add 200 gr. of tender zucchini previously washed and cut into round slices. Cook for 5 minutes.

Add salt and 100 gr. of diced ham

Cook for 4 minutes

Toss you favourite kind of pasta with the sauce and add plenty of grated Parmigiano-Reggiano cheese.

 

Sauce with olives, capers and cherry tomatoes  

Chop a spring onion and sauté’ it for 3 minutes in a pan with 4 tablespoons of extra virgin olive oil (If you can’t find the spring onion, use a regular onion)

Add 80 gr of drained pitted black olives, 30 gr. of marinated capers, and 120 gr. of sliced cherry tomatoes.

Cook for 5 minutes adding salt and parsley
